Additives are good!

Marietjie van Schalkwyk

Aim:

  • To introduce a great new resource to demonstrate modelling in food product development.
  • To give delegates the opportunity to experience the use of functional ingredients in the classroom.

Massey Food Technology has developed the first in a proposed range of food experiment kits. These experiment kits have been designed to support teachers in the delivery of food technology in the 21st Century.

This brand new resource covers the various directions for learning of the New Zealand Curriculum 2007. These experiments demonstrate the importance of using functional ingredients (additives) in food manufacturing. Without the use of these additives the food industry as we know it will not exist.

The intention of this workshop is to give teachers a hands-on opportunity to firstly try out the experiments and secondly to decide whether they would like to include the kit in their teaching programme for 2010 onwards.

Workshop sequence

  • Introduction – My work this year on a Royal Society Fellowship
  • Introduce food science experiment kits available on the market as a resource for NZC 2007.
  • Demonstrate the use of a variety of additives in food production.
  • Delegates have the opportunity to try out food science experiments in practice.

Intended audience

Food technology teachers interested in the use of creative methods for modelling product viability.
